I-Ullipaya karam, eyaziwa nangokuthi kadapa I-erra karam, isiphuzo esibabayo, esinambitheka esingajatshulelwa nge-idly, dosa, nelayisi. Le chutney ka-anyanisi yesitayela sase-Andhra iyisisekelo semizi eminingi futhi yengeza ukukhahlela okumnandi kunoma yikuphi ukudla. Ukwenza i-ullipaya karam, qala ngokusika u-anyanisi nopelepele obomvu emafutheni kuze kube yilapho sekuphekwe kahle. Zivumele ukuthi zipholile bese uzihlanganisa ne-tamarind, i-jaggery, nosawoti kuze kube yilapho ufinyelela ukuvumelana okubushelelezi, okusakazekayo. I-Ullipaya karam ingagcinwa esitsheni esingangeni moya futhi ifakwe esiqandisini kuze kube amasonto amabili, okuyenza ibe isengezo esikahle nesiguquguqukayo ekudleni kwakho.
