Tinda Sabzi - Indian Gourd Recipe

Ingredients

  • Apple Gourd (Tinda) - 500g
  • Onion - 2 medium, finely chopped
  • Tomato - 2 medium, finely chopped
  • Green Chilies - 2, slit
  • Ginger-Garlic Paste - 1 tsp
  • Turmeric Powder - 1/2 tsp
  • Coriander Powder - 1 tsp
  • Red Chili Powder - 1/2 tsp
  • Garam Masala Powder - 1/2 tsp
  • Salt - to taste
  • Mustard Oil - 2 tbsp
  • Fresh Coriander - for garnish

Recipe

  1. Wash and peel the gourds, then slice them into wedges or pieces.
  2. Heat oil in a pan, add the chopped onions, and cook until they turn golden brown.
  3. Add the ginger-garlic paste, green chilies, and sauté until the raw smell goes away.
  4. Next, add the tomatoes and cook until they turn soft.
  5. Now, add the turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
  6. Finally, add the apple gourd slices, coat them well with the masala, add a splash of water, cover, and cook until they're tender.
  7. Garnish with fresh coriander and serve hot with roti or rice.
