Tinda Sabzi - Indian Gourd Recipe

Ingredients
- Apple Gourd (Tinda) - 500g
- Onion - 2 medium, finely chopped
- Tomato - 2 medium, finely chopped
- Green Chilies - 2, slit
- Ginger-Garlic Paste - 1 tsp
- Turmeric Powder - 1/2 tsp
- Coriander Powder - 1 tsp
- Red Chili Powder - 1/2 tsp
- Garam Masala Powder - 1/2 tsp
- Salt - to taste
- Mustard Oil - 2 tbsp
- Fresh Coriander - for garnish
Recipe
- Wash and peel the gourds, then slice them into wedges or pieces.
- Heat oil in a pan, add the chopped onions, and cook until they turn golden brown.
- Add the ginger-garlic paste, green chilies, and sauté until the raw smell goes away.
- Next, add the tomatoes and cook until they turn soft.
- Now, add the turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
- Finally, add the apple gourd slices, coat them well with the masala, add a splash of water, cover, and cook until they're tender.
- Garnish with fresh coriander and serve hot with roti or rice.
