Thanksgiving Turkey Stuffed Empanadas
        Ingredients
- 2 cups cooked, shredded turkey
 - 1 cup cream cheese, softened
 - 1 cup shredded cheese (cheddar or Monterey Jack)
 - 1 cup diced bell peppers
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon onion powder
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 2 cups all-purpose flour
 - 1/2 cup unsalted butter, melted
 - 1 egg (for egg wash)
 - Vegetable oil (for frying)
 
Instructions
- In a large mixing bowl, combine the shredded turkey, cream cheese, shredded cheese, diced bell peppers, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
 - In a separate bowl, mix the flour and melted butter until a dough forms. Knead the dough on a floured surface until smooth.
 - Roll out the dough to about 1/8 inch thick and cut into circles (about 4 inches in diameter).
 - Place a tablespoon of the turkey mixture onto one half of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
 - In a large skillet, heat the vegetable oil over medium heat. Fry the empanadas until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
 - For a healthier option, bake the empanadas at 375°F (190°C) for 20-25 minutes or until golden.
