Sweet Potato Turkey Skillets

Ingredients:

  • 6 sweet potatoes (1500 g)
  • 4 lbs ground turkey (1816 g, 93/7)
  • 1 sweet onion (200 g)
  • 4 poblano peppers (500 g, green peppers work fine)
  • 2 Tbsp garlic (30 g, minced)
  • 2 Tbsp cumin (16 g)
  • 2 Tbsp chili powder (16 g)
  • 2 Tbsp olive oil (30 ml)
  • 10 Tbsp green onions (40 g)
  • 1 cup shredded cheese (112 g)
  • 2.5 cup salsa (600 g)
  • Salt and pepper to taste

Instructions:

  1. Wash and cut the sweet potatoes into a large dice.
  2. Boil sweet potatoes in water until easily pierced by a fork. Drain the water once cooked.
  3. Cut the peppers and onion into a small dice.
  4. Brown the turkey in a skillet over medium-high heat.
  5. Add the onion, peppers, and minced garlic to the skillet. Cook until the peppers have softened.
  6. Mix in chili powder, cumin, salt, and pepper to taste. Add the sweet potatoes and mix.
  7. Store the salsa in a separate container.

Plating:

  1. Divide the meat and potato mixture evenly into each of your containers. Top each dish with shredded cheese, green onions, and salsa.
