Sweet Potato Turkey Skillets

Ingredients:
- 6 sweet potatoes (1500 g)
- 4 lbs ground turkey (1816 g, 93/7)
- 1 sweet onion (200 g)
- 4 poblano peppers (500 g, green peppers work fine)
- 2 Tbsp garlic (30 g, minced)
- 2 Tbsp cumin (16 g)
- 2 Tbsp chili powder (16 g)
- 2 Tbsp olive oil (30 ml)
- 10 Tbsp green onions (40 g)
- 1 cup shredded cheese (112 g)
- 2.5 cup salsa (600 g)
- Salt and pepper to taste
Instructions:
- Wash and cut the sweet potatoes into a large dice.
- Boil sweet potatoes in water until easily pierced by a fork. Drain the water once cooked.
- Cut the peppers and onion into a small dice.
- Brown the turkey in a skillet over medium-high heat.
- Add the onion, peppers, and minced garlic to the skillet. Cook until the peppers have softened.
- Mix in chili powder, cumin, salt, and pepper to taste. Add the sweet potatoes and mix.
- Store the salsa in a separate container.
Plating:
- Divide the meat and potato mixture evenly into each of your containers. Top each dish with shredded cheese, green onions, and salsa.
