Stuffed Pork Chops

Ingredients
- 4 thick pork chops
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped spinach (fresh or frozen)
- 2 cloves garlic, minced
- 1 tsp onion powder
- Salt and pepper to taste
- Olive oil for cooking
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the bread crumbs, Parmesan cheese, chopped spinach, minced garlic, onion powder, salt, and pepper. Mix well until evenly combined.
- Make a pocket in each pork chop by cutting horizontally through the side. Stuff each chop generously with the mixture.
- In an oven-safe skillet, heat olive oil over medium heat. Sear the stuffed pork chops for about 3-4 minutes on each side until golden brown.
- Add the chicken broth to the skillet, then cover and transfer it to the preheated oven. Bake for about 25-30 minutes or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
