Stuffed Pork Chops

Ingredients

  • 4 thick pork chops
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped spinach (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the bread crumbs, Parmesan cheese, chopped spinach, minced garlic, onion powder, salt, and pepper. Mix well until evenly combined.
  3. Make a pocket in each pork chop by cutting horizontally through the side. Stuff each chop generously with the mixture.
  4. In an oven-safe skillet, heat olive oil over medium heat. Sear the stuffed pork chops for about 3-4 minutes on each side until golden brown.
  5. Add the chicken broth to the skillet, then cover and transfer it to the preheated oven. Bake for about 25-30 minutes or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
  6. Remove from the oven, let the pork chops rest for a few minutes before serving. Enjoy your delicious stuffed pork chops!
