Sprouts Omelette

Ingredients
- 2 eggs
- 1/2 cup mixed sprouts (moong, chickpeas, etc.)
- 1 small onion, finely chopped
- 1 small tomato, chopped
- 1-2 green chilies, finely chopped
- Salt to taste
- Black pepper to taste
- 1 tablespoon fresh coriander leaves, chopped
- 1 tablespoon oil or butter for frying
Instructions
- In a mixing bowl, crack the eggs and whisk them until they are well beaten.
- Add the mixed sprouts, chopped onion, tomato, green chilies, salt, black pepper, and coriander leaves to the eggs. Mix well until all ingredients are combined.
- Heat oil or butter in a non-stick frying pan over medium heat.
- Pour the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes or until the bottom is set and golden brown.
- Carefully flip the omelette using a spatula and cook the other side for another 2-3 minutes until fully cooked.
- Once cooked, transfer the omelette to a plate and cut into wedges. Serve hot with your choice of sauce or chutney.
