Sprouts Omelette

Ingredients

  • 2 eggs
  • 1/2 cup mixed sprouts (moong, chickpeas, etc.)
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 1-2 green chilies, finely chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh coriander leaves, chopped
  • 1 tablespoon oil or butter for frying

Instructions

  1. In a mixing bowl, crack the eggs and whisk them until they are well beaten.
  2. Add the mixed sprouts, chopped onion, tomato, green chilies, salt, black pepper, and coriander leaves to the eggs. Mix well until all ingredients are combined.
  3. Heat oil or butter in a non-stick frying pan over medium heat.
  4. Pour the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes or until the bottom is set and golden brown.
  5. Carefully flip the omelette using a spatula and cook the other side for another 2-3 minutes until fully cooked.
  6. Once cooked, transfer the omelette to a plate and cut into wedges. Serve hot with your choice of sauce or chutney.
