Anzac biscuits:

Makes 10-12, approx cost $0.30 - $0.50 per biscuit

  • 1 cup plain flour
  • 1 cup oats
  • 1 cup desiccated coconut
  • 3/4 cup white sugar

  • 3 tbsp maple syrup
  • 1 tsp baking soda

Bake for 12 mins at 180°C fan-forced

Creamy onion pasta:

Serves 4, approx cost per serving $2.85

  • 1 brown onion, sliced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 tbsp raw sugar
  • 1 tsp garlic powder
  • 1 tsp veggie stock powder
  • 1 + 1/2 cups plant cream
  • 1/2 tsp dijon mustard
  • 1 tbsp nutritional yeast
  • 400g spaghetti
  • 3/4 cup frozen green peas
  • 50g fresh baby spinach
  • 1 head broccoli
  • olive oil and salt, as desired, to cook broccoli

Simple vegan nachos:

Serves 1 large or 2 small, approx cost per serve $2.75 small serve

  • 3 garlic cloves, chopped finely
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 tbsp tomato paste
  • 1/4 cup water
  • 1 tsp smoked paprika
  • 1 tsp vegan beef stock
  • 1/4 cup bbq sauce
  • 400g butter beans, drained and rinsed
  • 400g red kidney beans, drained and rinsed
  • 1 cup passata
  • 4 white potatoes
  • 1/4 cup vegan butter
  • 1 tsp veggie stock powder
  • 1/4 cup soy milk
  • salt and pepper, to taste
