Shaljam ka Bharta Recipe
This comforting dish is perfect for warming up during the winter months, featuring the unique flavors of turnips mixed with aromatic spices.
Ingredients:
- Shaljam (Turnips) 1 kg
- Himalayan pink salt 1 tsp
- Water 2 Cups
- Cooking oil ¼ Cup
- Zeera (Cumin seeds) 1 tsp
- Adrak lehsan (Ginger garlic) crushed 1 tbs
- Hari mirch (Green chilli) chopped 1 tbs
- Pyaz (Onion) chopped 2 medium
- Tamatar (Tomatoes) finely chopped 2 medium
- Dhania powder (Coriander powder) 2 tsp
- Kali mirch (Black pepper) crushed ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Matar (Peas) ½ Cup
- Himalayan pink salt ½ tsp or to taste
- Hara dhania (Fresh coriander) chopped handful
- Garam masala powder ½ tsp
- Hari mirch (Green chilli) sliced (for garnish)
- Hara dhania (Fresh coriander) chopped (for garnish)
Directions:
- Peel turnips and cut them into small pieces.
- In a saucepan, add turnips, pink salt, and water. Mix well and bring to a boil. Cover and steam cook on low flame until turnips are tender (about 30 minutes) and the water dries up.
- Turn off the flame and mash well with the help of a masher. Set aside.
- In a wok, add cooking oil and cumin seeds. Add crushed ginger garlic and chopped green chili, and sauté for 1-2 minutes.
- Add chopped onion, mix well, and cook on medium flame for 4-5 minutes.
- Add finely chopped tomatoes, coriander powder, crushed black pepper, red chili powder, turmeric powder, and peas. Mix well, cover, and cook on medium flame for 6-8 minutes.
- Add the mashed turnip mixture, adjust salt if necessary, and mix well. Cover and cook on low flame until oil separates (about 10-12 minutes).
- Add garam masala powder and mix well.
- Garnish with sliced green chili and fresh coriander before serving. Enjoy your delicious Shaljam ka Bharta!
