Shaljam ka Bharta Recipe

This comforting dish is perfect for warming up during the winter months, featuring the unique flavors of turnips mixed with aromatic spices.

Ingredients:

  • Shaljam (Turnips) 1 kg
  • Himalayan pink salt 1 tsp
  • Water 2 Cups
  • Cooking oil ¼ Cup
  • Zeera (Cumin seeds) 1 tsp
  • Adrak lehsan (Ginger garlic) crushed 1 tbs
  • Hari mirch (Green chilli) chopped 1 tbs
  • Pyaz (Onion) chopped 2 medium
  • Tamatar (Tomatoes) finely chopped 2 medium
  • Dhania powder (Coriander powder) 2 tsp
  • Kali mirch (Black pepper) crushed ½ tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Haldi powder (Turmeric powder) ½ tsp
  • Matar (Peas) ½ Cup
  • Himalayan pink salt ½ tsp or to taste
  • Hara dhania (Fresh coriander) chopped handful
  • Garam masala powder ½ tsp
  • Hari mirch (Green chilli) sliced (for garnish)

Directions:

  1. Peel turnips and cut them into small pieces.
  2. In a saucepan, add turnips, pink salt, and water. Mix well and bring to a boil. Cover and steam cook on low flame until turnips are tender (about 30 minutes) and the water dries up.
  3. Turn off the flame and mash well with the help of a masher. Set aside.
  4. In a wok, add cooking oil and cumin seeds. Add crushed ginger garlic and chopped green chili, and sauté for 1-2 minutes.
  5. Add chopped onion, mix well, and cook on medium flame for 4-5 minutes.
  6. Add finely chopped tomatoes, coriander powder, crushed black pepper, red chili powder, turmeric powder, and peas. Mix well, cover, and cook on medium flame for 6-8 minutes.
  7. Add the mashed turnip mixture, adjust salt if necessary, and mix well. Cover and cook on low flame until oil separates (about 10-12 minutes).
  8. Add garam masala powder and mix well.
  9. Garnish with sliced green chili and fresh coriander before serving. Enjoy your delicious Shaljam ka Bharta!
