Restaurant-style Chicken Fajita Rice

Ingredients

  • Fajita Seasoning:
    • 1/2 tbs Red chili powder or to taste
    • 1 tsp Himalayan pink salt or to taste
    • 1 1/2 tsp Garlic powder
    • 1/2 tsp Black pepper powder
    • 1 tsp Cumin powder
    • 1/2 tsp Cayenne powder
    • 1 1/2 tsp Onion powder
    • 1 1/2 tsp Dried oregano
    • 1/2 tbs Paprika powder
  • Chicken Fajita Rice:
    • 350g Falak Extreme Basmati Rice
    • Water as required
    • 2 tsp Himalayan pink salt or to taste
    • 2-3 tbs Cooking oil
    • 1 tbs Chopped garlic
    • 350g Boneless chicken julienne
    • 2 tbs Tomato paste
    • 1/2 tbs Chicken powder (optional)
    • 1 medium sliced onion
    • 1 medium yellow bell pepper julienne
    • 1 medium capsicum julienne
    • 1 medium red bell pepper julienne
    • 1 tbs Lemon juice
  • Fire Roasted Salsa:
    • 2 large tomatoes
    • 2-3 Jalapenos
    • 1 medium onion
    • 4-5 cloves garlic
    • Handful of fresh coriander
    • 1/2 tsp Himalayan pink salt or to taste
    • 1/4 tsp Crushed black pepper
    • 2 tbs Lemon juice

Directions

Prepare Fajita Seasoning:

In a small jar, add red chili powder, pink salt, garlic powder, black pepper powder, cumin powder, cayenne pepper, onion powder, dried oregano, and paprika powder. Shake well to combine and your fajita seasoning is ready!

Prepare Chicken Fajita Rice:

In a bowl, add rice and water, wash thoroughly, and soak for 1 hour. Then, strain the soaked rice and set aside. In a pot, add water and bring it to a boil. Add pink salt, mix well, and add the soaked rice. Boil until 3/4 done (about 6-8 minutes), then strain and set aside.

In a wok, heat cooking oil, sauté garlic for a minute, then add chicken. Cook until the chicken changes color. Add tomato paste and chicken powder, mix well, and cook on medium flame for 2-3 minutes. Add onion, yellow bell pepper, capsicum, and red bell pepper. Stir-fry for 1-2 minutes. Add the prepared fajita seasoning and mix. Then, add the boiled rice, turning off the flame, and mix in the lemon juice.

Prepare Fire Roasted Salsa:

Place grill rack on the stove and fire roast tomatoes, jalapenos, onion, and garlic until charred on all sides. In a mortar and pestle, add roasted garlic, jalapeno, onion, fresh coriander, pink salt, and crushed black pepper, then crush well. Add roasted tomatoes and crush again, mixing in lemon juice.

Serve the chicken fajita rice alongside the prepared salsa!
