Protein Rich Chocolate Cake with Chickpeas

Ingredients:
Prepare Chocolate Chickpea Cake:
- Semi sweetened dark chocolate 200g
- Cooking oil 2 tbs
- Safed chanay (Chickpeas) boiled 250g
- Khajoor (Dates) soft & deseeded 8
- Anday (Eggs) 3
- Himalayan pink salt ¼ tsp or to taste
- Baking powder 1 tsp
- Baking soda ¼ tsp
- Vanilla essence 1 tsp
Prepare Chocolate Ganache:
- Semi sweetened dark chocolate 80g
- Cream 40ml
Directions:
Prepare Chocolate Chickpea Cake:
In a bowl,add dark chocolate,cooking oil & microwave for 1 minute then mix well until smooth & set aside.
In a blender jug,add chickpeas,dates,eggs & blend well.
Add melted chocolate,pink salt,baking powder,baking soda,vanilla essence & blend well until smooth.
Pour the batter to a 7 x 7” greased baking dish lined with butter paper & tap few times.
Bake in preheated oven at 180C for 25 minutes or until skewer comes out clean.
Let it cool.
Carefully remove the cake from pan & place it on a cooling rack.
Prepare Chocolate Ganache:
In a bowl,add dark chocolate,cream & microwave for 50 seconds then mix well until smooth.
Pour prepared chocolate ganache on the cake & spread evenly.
Cut into pieces & serve!
