Pahari Daal

Ingredients:
-Lehsan (Garlic) 12-15 cloves
-Adrak (Ginger) 2-inch piece
-Hari mirch (Green chillies) 2
-Sabut dhania (Coriander seeds) 1 tbs
-Zeera (Cumin seeds) 2 tsp
-Sabut kali mirch (Black peppercorns) ½ tsp
-Urad daal (Split black gram) 1 Cup (250g)
-Sarson ka tel (Mustard oil) 1/3 Cup Substitute: cooking oil of your choice
-Rai dana (Black mustard seeds) 1 tsp
-Pyaz (Onion) chopped 1 small
-Hing powder (Asafoetida powder) ¼ tsp
-Atta (Wheat flour) 3 tbs
-Water 5 Cups or as required
-Haldi powder (Turmeric powder) ½ tsp
-Himalayan pink salt 1 & ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Hara dhania (Fresh coriander) chopped handful
Directions:
-In a mortal & pestle,add garlic,ginger,green chillies,coriander seeds,cumin seeds,black peppercorns & crush coarsely & set aside.
-In a wok,add split black gram and dry roast on low flame for 8-10 minutes.
-Let it cool.
-In a grinding jar,add roasted lentil,grind coarsely & set aside.
-In a pot,add mustard oil & heat it to smoke point.
-Add black mustard seeds,onion,asafoetida powder,mix well & sauté for 2-3 minutes.
-Add crushed spices, wheat flour and cook for 2-3 minutes.
-Add ground lentil, water & mix well.
-Add turmeric powder,pink salt,red chilli powder,mix well & bring it to boil,cover and cook on low flame until tender (30-40 minutes),check & stir in between.
-Add fresh coriander and serve with rice!
