Mediterranean Chicken Bowl with Tzatziki Sauce

Ingredients

For the Mediterranean Chicken:

  • Fresh basil leaves - handful
  • Lehsan (Garlic) cloves - 3-4
  • Paprika powder - ½ tsp
  • Kali mirch (Black pepper) crushed - ½ tsp
  • Himalayan pink salt - ½ tsp or to taste
  • Tomato paste - 1 tbs
  • Mustard paste - ½ tbs
  • Lemon juice - 1 tbs
  • Olive oil - 2 tbs
  • Chicken fillets - 2 (375g)
  • Cooking oil - 2-3 tbs

For the Rice:

  • Olive oil - 1-2 tbs
  • Pyaz (Onion) chopped - 1 small
  • Lehsan (Garlic) chopped - 1 tsp
  • Chawal (Rice) - 2 Cups (boiled with salt)
  • Zeera (Cumin seeds) roasted & crushed - 1 tsp
  • Kali mirch powder (Black pepper powder) - ½ tsp
  • Himalayan pink salt - ¼ tsp or to taste
  • Hara dhania (Fresh coriander) chopped - 1-2 tbs

For the Veggie & Feta Salad:

  • Kheera (Cucumber) - 1 medium
  • Pyaz (Onion) - 1 medium
  • Cherry tomatoes halved - 1 Cup
  • Kali mirch powder (Black pepper powder) - ½ tsp
  • Himalayan pink salt - ½ tsp or to taste
  • Lemon juice - 1 tbs
  • Hara dhania (Fresh coriander) chopped - 1 tbs
  • Feta cheese - 100g

For the Tzatziki Sauce:

  • Dahi (Yogurt) hung - 200g
  • Lehsan (Garlic) - 2 cloves
  • Lemon juice - 1 tsp
  • Kali mirch (Black pepper) crushed - to taste
  • Himalayan pink salt - ½ tsp or to taste
  • Kheera (Cucumber) grated & squeezed - 1 medium
  • Hara dhania (Fresh coriander) chopped - handful
  • Olive oil - 1-2 tsp

Directions

Prepare Mediterranean Chicken:

  1. In a grinder, add fresh basil leaves, garlic, paprika powder, crushed black pepper, pink salt, tomato paste, mustard paste, lemon juice, and olive oil. Grind well to make a thick paste.
  2. Rub the marinade on the chicken fillets, coat well, cover, and marinate for 30 minutes.
  3. In a cast iron pan, heat cooking oil and cook marinated fillets from both sides until done (about 8-10 minutes). Let it rest for a few minutes before slicing and setting aside.

Prepare Rice:

  1. In a wok, heat cooking oil, sauté onion and garlic for 2 minutes.
  2. Add boiled rice, roasted cumin seeds, black pepper powder, pink salt, and fresh coriander. Mix well and set aside.

Prepare Veggie & Feta Salad:

  1. In a bowl, combine cucumber, onion, cherry tomatoes, crushed black pepper, pink salt, lemon juice, and fresh coriander. Toss well.
  2. Gently fold in the feta cheese. Set aside.

Prepare Tzatziki Sauce:

  1. In a bowl, whisk together yogurt, garlic, lemon juice, crushed black pepper, and pink salt.
  2. Add grated cucumber and fresh coriander; mix well. Drizzle with olive oil and set aside.

Serving:

On a serving plate, layer prepared rice, Mediterranean chicken fillets, veggie & feta salad, and tzatziki sauce. Serve immediately and enjoy this flavor-packed Mediterranean dish!
