Mango Icecream Cake

Ingredients:

  • Aam (Mango) chunks 1 Cup
  • Sugar ¼ Cup or to taste
  • Lemon juice 1 tbs
  • Omore Mango Ice Cream
  • Aam (Mango) chunks as required
  • Pound cake slices as required
  • Whipped cream
  • Aam (Mango) chunks
  • Cherries
  • Podina (Mint leaves)

Directions:

Prepare Mango Puree:

  1. In a jug,add mango & blend well to make a puree.
  2. In a saucepan,add mango puree,sugar,lemon juice,mix well & cook on low flame until sugar is dissolved (3-4 minutes).
  3. Let it cool.

Assembling:

  1. Line rectangular cake loaf pan with aluminum foil.
  2. Add a layer of mango ice cream & spread evenly.
  3. Add mango chunks & press gently.
  4. Place pound cake & spread prepared mango puree on it.
  5. Add mango ice cream & spread evenly.
  6. Place pound cake,cover with cling film & seal properly.
  7. Let it freeze for 8-10 hours or overnight in freezer.
  8. Flip the cake pan & carefully remove the aluminum foil from the cake.
  9. Add & spread whipped cream all over the cake.
  10. Decorate with whipped cream,mango chunks,cherries & mint leaves.
  11. Cut into slices & serve!
