Mango Icecream Cake

Ingredients:
- Aam (Mango) chunks 1 Cup
- Sugar ¼ Cup or to taste
- Lemon juice 1 tbs
- Omore Mango Ice Cream
- Aam (Mango) chunks as required
- Pound cake slices as required
- Whipped cream
- Aam (Mango) chunks
- Cherries
- Podina (Mint leaves)
Directions:
Prepare Mango Puree:
- In a jug,add mango & blend well to make a puree.
- In a saucepan,add mango puree,sugar,lemon juice,mix well & cook on low flame until sugar is dissolved (3-4 minutes).
- Let it cool.
Assembling:
- Line rectangular cake loaf pan with aluminum foil.
- Add a layer of mango ice cream & spread evenly.
- Add mango chunks & press gently.
- Place pound cake & spread prepared mango puree on it.
- Add mango ice cream & spread evenly.
- Place pound cake,cover with cling film & seal properly.
- Let it freeze for 8-10 hours or overnight in freezer.
- Flip the cake pan & carefully remove the aluminum foil from the cake.
- Add & spread whipped cream all over the cake.
- Decorate with whipped cream,mango chunks,cherries & mint leaves.
- Cut into slices & serve!
