Lemon Coriander Soup
Ingredients
- ¼ medium sized Cabbage (पत्ता गोबी)
- ½ Carrot (गाजर)
- 10 French Beans (फ्रेंच बीन्स)
- ½ Capsicum (शिमला मिर्च)
- 100 grams Paneer (पनीर)
- Small bunch Fresh Coriander (हरा धनिया)
- 1.5-2 litres Water (पानी)
- 1 Veg Stock Cube (वेज स्टॉक क्यूब)
- 1 tbsp Oil (तेल)
- 2 tbsp Chopped Garlic (लहसुन)
- 1 tbsp Chopped Ginger (अदरक)
- 2 finely chopped Green Chilli (हरी मिर्च)
- A large pinch White Pepper Powder (सफेद मिर्च पाउडर)
- A large pinch Sugar (शक्कर)
- ¼ tsp Light Soy Sauce (लाइट सोया सॉस)
- Salt to taste (नमक)
- 4-5 tbsp Corn Flour (कॉर्न फ्लोर)
- 4-5 tbsp Water (पानी)
- Fresh Coriander (हरा धनिया)
- Lemon juice of 1 lemon (नींबू का रस)
- A handful Chopped Spring Onion Greens (हरे प्याज़ के पत्ते)
Method
Begin by chopping all vegetables into fine dices using a chopper for convenience, or alternatively, use a knife. Cut the paneer into fine dices and set aside. Trim and finely chop the coriander stalks, transferring them into a bowl for later use. Chop the fresh coriander leaves separately.
In a stock pot, add water and the vegetable stock cube, stirring well to bring to a boil. If a stock cube is not available, hot water can be used instead, although stock enhances flavor. Heat oil in a wok over high flame. Add garlic, ginger, green chilli, and coriander stems, cooking briefly over high heat.
Next, pour in the stock or hot water, stirring to a boil. Add the chopped veggies, white pepper powder, sugar, light soy sauce, salt, and paneer, stirring and cooking for 2-3 minutes. In a separate bowl, mix corn flour with water to create a slurry, then add this to the soup while stirring continuously until it thickens.
Stir in the chopped fresh coriander and lemon juice, tasting and adjusting seasoning as necessary. More lemon juice can also be added if desired. Finally, sprinkle spring onion greens on top, serving up a comforting and delicious Lemon Coriander Soup.
