Amla Achar Recipe
Ingredients
- 500g Amla (Indian Gooseberries)
- 200g Salt
- 2 tablespoons Turmeric Powder
- 3 tablespoons Red Chili Powder
- 1 tablespoon Mustard Seeds
- 1 tablespoon Asafoetida (Hing)
- 1 tablespoon Sugar (optional)
- 500ml Mustard Oil
Instructions
1. Begin by washing the Amla thoroughly and patting them dry with a clean cloth. Once dried, cut each Amla into quarters and remove the seeds.
2. In a large mixing bowl, combine the Amla pieces with salt, turmeric powder, and red chili powder. Mix well to ensure the Amla is thoroughly coated with spices.
3. Heat mustard oil in a heavy-bottomed pan until it reaches smoking point. Allow it to cool slightly before pouring it over the Amla mixture.
4. Add mustard seeds and asafoetida to the mixture, then stir again to combine evenly.
5. Transfer the Amla achar to an airtight jar, sealing well. Allow the achar to marinate for at least 2 to 3 days under the sun for enhanced flavor. Alternatively, you can store it in a cool, dark place.
