Katori Chaat

Ingredients:
- For the Katori:
- 1 cup all-purpose flour
- 1/2 teaspoon carom seeds (ajwain)
- Salt to taste
- Water as needed
- Oil for frying
- For the Filling:
- 1 cup boiled chickpeas (chana)
- 1/2 cup finely chopped onions
- 1/2 cup chopped tomatoes
- 1/2 cup yogurt
- 1/4 cup tamarind chutney
- Chaat masala to taste
- Fresh coriander leaves for garnishing
- Sev for topping
Instructions:
- In a mixing bowl, combine all-purpose flour, carom seeds, and salt. Gradually add water to knead into a smooth dough. Let it rest for 15 minutes.
- Divide dough into small balls and roll each ball into thin circles.
- Heat oil in a deep pan. Gently place the rolled dough in the oil and deep fry until golden and crispy, shaping them into katori using a slotted spoon.
- Once done, remove them from oil and let them cool on a paper towel to absorb excess oil.
- To assemble Katori Chaat, fill each crispy katori with boiled chickpeas, chopped onions, and tomatoes.
- Add a dollop of yogurt, drizzle tamarind chutney, and sprinkle chaat masala.
- Garnish with fresh coriander leaves and sev. Serve immediately and enjoy this wonderful Indian Chaat experience!
