Instant Veggie Fried Rice

Ingredients
- 1 cup long grain rice
- 2 cups water
- Soy sauce
- Ginger
- Minced garlic
- Chopped vegetables (carrots, peas, bell peppers, and corn work well)
- 1/2 cup chopped green onions
- 1 tbsp oil
- 1 egg (optional)
Instructions
- Cook rice in water according to package directions.
- Scramble egg (if using) in a separate pan.
- Heat oil in a large skillet or wok over medium heat. Add the minced garlic to the pan and cook for about 30 seconds, then add the chopped vegetables and ginger.
- Turn heat to high, and stir fry 2-3 minutes until veggies are crisp-tender. Add cooked rice and egg, if using, to skillet and stir. Then add soy sauce and green onions. Serve hot.
