Instant Veggie Fried Rice

Ingredients

  • 1 cup long grain rice
  • 2 cups water
  • Soy sauce
  • Ginger
  • Minced garlic
  • Chopped vegetables (carrots, peas, bell peppers, and corn work well)
  • 1/2 cup chopped green onions
  • 1 tbsp oil
  • 1 egg (optional)

Instructions

  1. Cook rice in water according to package directions.
  2. Scramble egg (if using) in a separate pan.
  3. Heat oil in a large skillet or wok over medium heat. Add the minced garlic to the pan and cook for about 30 seconds, then add the chopped vegetables and ginger.
  4. Turn heat to high, and stir fry 2-3 minutes until veggies are crisp-tender. Add cooked rice and egg, if using, to skillet and stir. Then add soy sauce and green onions. Serve hot.
