Hummus Pasta Salad Recipe
Ingredients
- 8 oz (225 g) pasta of choice
- 1 cup (240 g) hummus
- 1 cup (150 g) cherry tomatoes, halved
- 1 cup (150 g) cucumber, diced
- 1 bell pepper, diced
- 1/4 cup (60 ml) lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked pasta and hummus, mixing until the pasta is well coated.
- Add in the cherry tomatoes, cucumber, bell pepper, and lemon juice. Toss to combine.
- Season with salt and pepper to taste. Stir in chopped parsley for extra flavor.
- Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing pasta salad.
