Hummus Pasta Salad Recipe

Ingredients

  • 8 oz (225 g) pasta of choice
  • 1 cup (240 g) hummus
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup (60 ml) lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta and hummus, mixing until the pasta is well coated.
  3. Add in the cherry tomatoes, cucumber, bell pepper, and lemon juice. Toss to combine.
  4. Season with salt and pepper to taste. Stir in chopped parsley for extra flavor.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing pasta salad.
