Healthy Meatloaf - Low Carb, Low Fat, High Protein

Ingredients:

  1. Ground Beef - 2 pounds (90%+ lean)
  2. Cauliflower Rice - 1 bag of frozen cauliflower rice (no added sauces or seasonings)
  3. 2 Large Eggs
  4. Tomato Sauce - 1 cup (low fat marinara or similar, can also use tomato paste or ketchup, but they add extra carbs)
  5. White Onion - 3 slices (about 1/4” thick)
  6. 1 teaspoon Granulated Onion Powder
  7. 1 teaspoon Salt
  8. 1 teaspoon Cracked Black Pepper
  9. 1 Packet Sodium-free Beef Bouillon Packet (optional but highly recommended — note: if you can’t find sodium-free bouillon, you can reduce the added salt in the recipe to 1/2tsp or less)
  10. Maggi Seasoning or Worcestershire Sauce - a few shakes (optional but also highly recommended — along with the bouillon packet, this really helps it taste like meatloaf instead of a hamburger)

Cooking Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, combine the cauliflower rice, all seasonings, bouillon powder (if using), and Maggi sauce or Worcestershire sauce. Stir well, ensuring no large clumps of frozen cauliflower rice remain.
  3. Add the 2 pounds of ground beef and 2 eggs to the mixture. Mix thoroughly with hands (disposable gloves are convenient for this), ensuring even distribution of ingredients without overworking the meat.
  4. While still in the bowl, divide the mixture roughly into two equal parts (you can use a food scale for precision if desired).
  5. Form each half of the meat mixture into a loaf shape with your hands, and place in an oven-safe cooking vessel with sides high enough to contain all of the juices, such as a glass Pyrex baking dish, cast iron, etc.
  6. Layer the onion slices on top of each loaf. Arrange them evenly, covering the surface.
  7. Spread tomato sauce (or paste, or ketchup) over each loaf evenly
  8. Place the meatloafs in the preheated oven and cook for approximately one hour.
  9. Check the internal temperature with a food thermometer; ensure it reaches at least 160 degrees Fahrenheit.
  10. Allow the meatloaf to rest for a few minutes before slicing.
  11. Serve with vegetables or salad for a complete healthy meal, or for the ultimate low carb meatloaf side dish, whip up some cauliflower-rice mashed “potatoes”.
