Daal Kachori With Aloo Ki Tarkari

Ingredients for Daal Kachori:

  • 1 cup split yellow lentils (daal), soaked for 2 hours
  • 2 cups all-purpose flour (maida)
  • 2 medium potatoes, boiled and mashed
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Oil for frying

Instructions:

  1. Start by preparing the filling. Drain the soaked lentils and grind them into a coarse paste.
  2. In a pan, heat a little oil and add cumin seeds. Once they splutter, add the ground lentils, turmeric powder, red chili powder, and salt. Cook until the mixture becomes dry. Set aside to cool.
  3. In a mixing bowl, combine all-purpose flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and let it rest for 30 minutes.
  4. Divide the dough into small balls. Roll each ball into a small disc. Place a spoonful of the lentil mixture in the center.
  5. Fold the edges over the filling and seal it properly to form a ball. Gently flatten it.
  6. Heat oil in a pan for deep frying. Fry the kachoris on medium heat until golden brown and crispy.
  7. For the potato curry, heat oil in another pan, add boiled and mashed potatoes, and season with salt and spices as per your taste. Cook for about 5 minutes.
  8. Serve the hot daal kachoris with aloo ki tarkari for a delicious meal.
