Daal Kachori With Aloo Ki Tarkari

Ingredients for Daal Kachori:
- 1 cup split yellow lentils (daal), soaked for 2 hours
- 2 cups all-purpose flour (maida)
- 2 medium potatoes, boiled and mashed
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Oil for frying
Instructions:
- Start by preparing the filling. Drain the soaked lentils and grind them into a coarse paste.
- In a pan, heat a little oil and add cumin seeds. Once they splutter, add the ground lentils, turmeric powder, red chili powder, and salt. Cook until the mixture becomes dry. Set aside to cool.
- In a mixing bowl, combine all-purpose flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and let it rest for 30 minutes.
- Divide the dough into small balls. Roll each ball into a small disc. Place a spoonful of the lentil mixture in the center.
- Fold the edges over the filling and seal it properly to form a ball. Gently flatten it.
- Heat oil in a pan for deep frying. Fry the kachoris on medium heat until golden brown and crispy.
- For the potato curry, heat oil in another pan, add boiled and mashed potatoes, and season with salt and spices as per your taste. Cook for about 5 minutes.
- Serve the hot daal kachoris with aloo ki tarkari for a delicious meal.
