Chinese BBQ Biryani

The Chinese BBQ Biryani recipe serves 4-6 and requires the following ingredients:

  • Boiling water as required
  • Himalayan pink salt 1 tbs
  • Hari mirch (Green chillies) 2-3
  • Chawal (Rice) soaked 500g
  • Boneless chicken cubes 500g
  • Lal mirch (Red chilli) crushed 1 tsp
  • Himalayan pink salt 1 tsp or to taste
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Adrak lehsan paste (Ginger garlic paste) 2 tsp
  • Soy sauce 1 tbs
  • Sirka (Vinegar) 1 tbs
  • Cooking oil 3-4 tbs
  • Lehsan (Garlic) chopped 2 tbs
  • Adrak (Ginger) chopped 1 tbs
  • Chicken yakhni (Stock) ½ Cup
  • Chilli sauce 2 tbs
  • Soy sauce 2 tbs
  • Sirka (Vinegar) 1 tbs
  • Himalayan pink salt 1 tsp or to taste
  • Kali mirch powder (Black pepper powder) 1 tsp
  • Sugar 1 tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Matar (Peas) 1 Cup
  • Gajar (Carrot) sliced 1 Cup
  • Pyaz (Onion) diced 1 Cup
  • Shimla mirch (Capsicum) diced 1 Cup
  • Band gobhi (Cabbage) diced 1 Cup
  • Hara pyaz (Spring onion) chopped ½ Cup
  • Koyla (Charcoal) for smoke
  • Chilli sauce 1 tbs
  • Green chilli sauce 1 tbs
  • Soy sauce 1 tbs
  • Hara pyaz (Spring onion) leaves chopped 3 tbs
  • Cooking oil 1 tbs

Directions:

-In boiling water,add pink salt,green chillies & mix well.
-Add soaked rice & boil on medium flame until 90% done then strain & set aside.
-In a bowl,add chicken,red chilli crushed,pink salt,black pepper powder,ginger garlic paste,soy sauce, vinegar & mix well,cover & marinate for 30 minutes.
-In a wok,add cooking oil,garlic,ginger & sauté for a minute.
-Add marinated chicken,mix well & cook on medium flame for 4-5 minutes.
-Add chicken stock,chilli sauce,soy sauce,vinegar,pink salt,black pepper powder,sugar,red chilli powder, mix well & cook on medium flame for 2-3 minutes.
-Add peas,carrot,onion,capsicum,cabbage,spring onion & mix well.
-Turn off the flame & give coal smoke for 3 minutes.
-Take out half quantity & reserve it for layering.
-Add half quantity of boiled rice,chilli sauce,green chilli sauce,soy sauce,chicken & veg gravy,remaining boiled rice,spring onion green leaves,cooking oil,cover & cook on low flame for 8-10 minutes & serve!
