Buttermilk Pancakes

Ingredients:
- 2 cups all-purpose flour
- 2 Tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 2 cups low fat buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 3 Tbsp unsalted butter, melted
- 2 Tbsp Light olive oil or vegetable oil, plus more as needed to sauté
To prepare the buttermilk pancakes, start by combining the dry ingredients in a bowl. In a separate bowl, mix the wet ingredients and then combine them with the dry ingredients. Cook the pancakes on a greased skillet until bubbles form, flip and cook until they are golden brown. Serve and enjoy!
