Butter basting has 3 primary benefits - more even cooking, flavor distribution, and improved crust. To butter baste, preheat the cast iron on high, add avocado oil, and add butter once the pan is very hot. Baste with thicker steaks, flip frequently, and aim for a medium-rare temperature of 130-135F internal.
