Ingredientia:

Para Lagan Qeema:
-Beef qeema (tereia) sal 1 k
-Himalayan sal roseum 1 & ½ tsp vel gustare
-Kacha papita ( Cruda papaya) crustulum 1 tbs
-Adrak lehsan crustulum (Gingiberi allium crustulum) 2 tbs
-Badam (Amygdalarum) maceratum & depilatum 15-16
-Kaju (Cashew nuces) 10-12
- Khopra (Cocoes desiccatus) 2 tbs
-Hari mirch (Chellies viridis) 5-6
-Podina (folia Mint) 12-15
-Hara dhania (coriandri recentis) 2-3 tbs
- Lemon sucus 2 tbs
-Water 5-6 tbs
-Lal mich pulveris (Colli pulveris rubri) 2 tsp vel gustus
-Kabab cheeni (Cubeb spice) pulveris 1 tsp
-Elaichi pulveris ( Cardamomum pulveris) ½ tsp
-Garam masala pulveris 1 tsp
-Kali mirch pulveris (Piperis nigri pulveris) 1 & ½ tsp
-Haldi pulveris (turmeric pulveris) ½ tsp
-Pyaz (ceparum) frixum 1 Cup
-Dahi (Yogurt) restitutum 1 Calicem
-Cream ¾ Calicem
-Ghee (Declaratum Butyrum) ½ Calix
-Koyla (Carbo) pro fumo

Para Paratha:
-Paratha farinam 150g pila singula
-Ghee (butyrum declaratur) 1 tbs
-Ghee (declarata butyrum) 1 tbs
-Hara dhania (coriandrum recens) concisis
-Hari mirch (Chillies viridis) crustae 1-2
-Pyaz (cepa) annuli

Directiones:
Para Lagan Qeema:
-In ollam, teres bubulam adde, sal roseum, papaya rudis crustulum, allium crustulum gingiber & bene misce, operculum & marinate per horam 1.
-In aromatis molentis, amigdalas adde, nuces nummarias, cocoes & teres bene desiccatas.
-Adde chillies virides, folia menta, coriandrum recens. , lemon suci, aqua & tere bene facere farinam spissam & sepositam.
-In ollam, adde pulverem rubrum chilli, spice pulverem cubebum, pulverem amomi, pul- verem garam masalem, pulveris piperis nigrum, pulverem turmericanum, cepam frixam. , yogurt, cremor, butyrum declaratur, farinam humum & commisce donec bene componatur, operculum & marinatum per 1 horam vel pernoctare in refrigerator.
-Turn super flammam & coque in flamma media pro 5-6 minuta, operculum & pone laminam diffundentem caloris vel sartulam sub olla & coque flammam humilia per 25-30 minuta (reprehendo & excita inter) tum Coque in flamma media donec oleum separat (4-5 minuta).
- Da carbonem fumum per 2 minuta quam carbo removere, operire & requiescere 3-4 minuta.
Para Paratha:
- Accipe farinam globum (150g), consperge farinam aridam & evolve ope volubilis acu.
-Add & dilata butyrum clarificatum, undique flip ut figuram quadratam facias.
-Sparge farinam aridam & evolve ope volventis acu.
-On sartagine calefacta, pone paratha, adde butyrum eliquatum & coque in media flamma utrinque donec fiat.
-Garnish recenti coriandro, viridis chillies, cepae annuli & paratha cum servis !
