Ingredients

  • 1 cup proso millet (or any small millet such as kodo, barnyard, samai)
  • 1 block of marinated tofu (or paneer/mung sprouts)
  • Mixed vegetables of choice (e.g., bell peppers, carrots, spinach)
  • Olive oil
  • Salt and pepper to taste
  • Spices (optional; cumin, turmeric, etc.)

Instructions

1. Rinse the proso millet thoroughly under cold water until the water runs clear. This helps remove any impurities and enhances the taste.

2. In a pot, add the rinsed millet and double the amount of water (2 cups of water for 1 cup of millet). Bring to a boil, then reduce the heat to low and cover. Allow it to simmer for about 15-20 minutes or until the millet is fluffy and water is absorbed.

3. While the millet is cooking, heat a pan over medium heat and add a drizzle of olive oil. Toss in your mixed vegetables and sauté until they are tender.

4. Add the marinated tofu to the vegetables and cook until heated through. Season with salt, pepper, and any preferred spices.

5. Once the millet is done, fluff it with a fork and mix it with the sautéed vegetables and tofu.
