Turmeric Chicken and Rice Casserole

Ingredients:

- 2 cups basmati rice
- 2 lbs chicken breasts
- 1/2 cup grated carrot
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp paprika
- 1 14oz can coconut milk
- salt and pepper, to taste
- chopped cilantro, for garnish

Preheat the oven to 375F. Saute the onion, garlic, and spices. Add the coconut milk, rice, and grated carrot to the casserole dish. Place the chicken breasts on top, season with salt and pepper, and bake in the oven for 30 minutes. Fluff the rice and serve with chopped cilantro.
