Sweet Corn Vegetable Soup

- 2 cups corn kernels
- 1 cup mixed vegetables
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable stock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
Instructions: Saute the onion, garlic, corn, and mixed vegetables. Add the vegetable stock, salt, and pepper. Simmer for 20 minutes. Blend the soup and return to the pot. Stir in the heavy cream. Simmer for an additional 10 minutes. Serve hot.
