Shahi Gajrela Recipe

Ingredients:

  • Gajar (Carrots) 300 gm
  • Chawal (Rice) basmati ¼ Cup (soaked for 2 hours)
  • Doodh (Milk) 1 & ½ litres
  • Sugar ½ Cup or to taste
  • Elaichi ke daane (Cardamom powder) crushed ¼ tsp
  • Badam (Almonds) sliced 2 tbs
  • Pista (Pistachios) sliced 2 tbs
  • Pista (Pistachios) as required for garnish
  • Walnut (Akhrot) chopped 2 tsp
  • Dessicated coconut for garnish

Directions:

  • In a bowl,grate carrots with the help of grater & set aside.
  • Crushed soaked rice with hands & set aside.
  • In a pot,add milk & bring it to boil.
  • Add grated carrots,ground rice and mix well,bring it to boil & cook on medium flame for 5-6 minutes,cover partially & cook on low flame for 40 min to 1 hr and keep stirring in between.
  • Add sugar,cardamom seeds,almonds,pistachios,mix well & cook on medium flame until milk is reduced and thickened (5-6 minutes).
  • Garnish with pistachios and dessicated coconut & serve hot or chilled!
