Shahi Gajrela Recipe

Ingredients:
- Gajar (Carrots) 300 gm
- Chawal (Rice) basmati ¼ Cup (soaked for 2 hours)
- Doodh (Milk) 1 & ½ litres
- Sugar ½ Cup or to taste
- Elaichi ke daane (Cardamom powder) crushed ¼ tsp
- Badam (Almonds) sliced 2 tbs
- Pista (Pistachios) sliced 2 tbs
- Pista (Pistachios) as required for garnish
- Walnut (Akhrot) chopped 2 tsp
- Dessicated coconut for garnish
Directions:
- In a bowl,grate carrots with the help of grater & set aside.
- Crushed soaked rice with hands & set aside.
- In a pot,add milk & bring it to boil.
- Add grated carrots,ground rice and mix well,bring it to boil & cook on medium flame for 5-6 minutes,cover partially & cook on low flame for 40 min to 1 hr and keep stirring in between.
- Add sugar,cardamom seeds,almonds,pistachios,mix well & cook on medium flame until milk is reduced and thickened (5-6 minutes).
- Garnish with pistachios and dessicated coconut & serve hot or chilled!
