Savory Breakfast Oatmeal
  • 1 large egg
  • 2 slices turkey bacon
  • 1/2 cup rolled oatmeal
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup water
  • 1/2 cup egg whites
  • 1/2 teaspoon low-sodium soy sauce (or coconut aminos)
  • 1 scallion, thinly sliced

HARD BOILED EGGS: Place eggs in a small pot, bring to boil, simmer and cover, set timer for 4-5 minutes. Drain, cool with ice, peel and set aside.

TURKEY BACON: Heat in skillet, turning every minute until browned.

SAVORY OATMEAL: Cook oatmeal, broth, and water until softened. Stir in egg whites and cook, adding soy sauce. Transfer to a bowl and top with hard-boiled egg, crumbled bacon, and scallions.
