Sabudana Pilaf

Ingredients:

Sabudana / Tapioca Pearls - 1 cup Olive oil - 2 Tsp Onion - 1/2 Green chilli - 1 1/2 Tsp Curry leaves - 1 Tsp Mustard seeds - 1/2 Tsp Cumin seeds - 1/2 Tsp Water - 1 1/2 cup Potatoes - 1/2 cup Turmeric powder - 1/8 Tsp Himalayan Pink Salt - 1/2 Tsp Dry roasted peanuts - 1/4 cup Coriander leaves - 1/4 cup Lime juice - 2 Tsp

Preparation:

Clean and soak the Sabudana / tapioca pearls for 3 hours, then drain the water and keep aside. Now take a sauce pan heat it and add olive oil and then add mustard seeds, cumin seeds let it splutter. Now add onion, green chilli choppings along with curry leaves. Now add salt turmeric powder and cooked potatoes and saute well. Add tapioca pearls, roasted peanuts coriander leaves and saute for 2 minutes. Now add lime juice, then mix well and serve it hot!
