Recipe for Fluffy Blini

Ingredients
1 ½ cups | 190 g flour
4 teaspoons baking powder
A pinch of salt
2 tablespoons of sugar (optional)
1 egg
1 ¼ cups | 310 ml milk
¼ cup | 60 g melted butter + more for cooking
½ teaspoon vanilla extract
Instructions
In a large mixing bowl, combine flour, baking powder, and salt with a wooden spoon. Set aside.
In a smaller bowl, beat the egg and pour in the milk.
Add melted butter and vanilla extract to the egg and milk and use a whisk to combine everything well.
Make a well in the dry ingredients and pour in the wet ingredients. Stir the batter with a wooden spoon until there are no more large lumps.
To make the blini, heat a heavy skillet, such as a cast-iron one, over medium heat. When the skillet is hot, add a little melted butter and ⅓ cup of batter for each blin.
Cook the blini for 2-3 minutes on each side. Repeat with the remaining batter.
Serve the blini stacked on top of each other, with butter and maple syrup. Enjoy
Notes
You can add other flavors to the blini, such as blueberries or drops of chocolate. Add additional ingredients while combining the wet and dry ingredients.
