Quick Vegetable Stir-Fry

- 60g broccolini<\u002Fli>
- 1\u002F2 cup baby corn kernels<\u002Fli>
- 1 tbsp hoisin sauce<\u002Fli>
- 1 tsp black soy sauce<\u002Fli>
- 1 1\u002F2 tbsp soy sauce<\u002Fli>
- 1 tsp black vinegar<\u002Fli>
- drizzle of toasted sesame oil<\u002Fli>
- drizzle of olive oil<\u002Fli><\u002Ful>

- Quarter the cremini mushrooms. Roughly chop the red onion, green bell pepper, and red bell pepper. Cut the broccolini into pieces<\u002Fli>
- To prepare the sauce, mix the hoisin sauce, both soy sauces, black vinegar, and toasted sesame oil<\u002Fli>
- Heat a non-stick skillet over medium heat. Drizzle with olive oil<\u002Fli>
- Sauté the red onion and both bell peppers for a few minutes<\u002Fli>
- Add the mushrooms and broccolini. Sauté for 3-4 min<\u002Fli>
- Add the baby corn kernels and the sauce. Sauté for a few more minutes, then serve<\u002Fli><\u002Ful><\u002Ful>
