Qissa Khawani Kheer

Ingredients:

  • Water 4 Cups
  • Chawal (Rice) tota ¾ Cup (soaked for 2 hours)
  • Papay (Rusk) 6-7
  • Doodh (Milk) 1 Cup
  • Sugar ½ Cup
  • Doodh (Milk) 1 & ½ litre
  • Sugar ¾ Cup or to taste
  • Elaichi powder (Cardamom powder) 1 tsp
  • Badam (Almonds) sliced 1 tbs
  • Pista (Pistachios) sliced 1 tbs
  • Badam (Almonds) half
  • Pista (Pistachios) sliced
  • Badam (Almonds) sliced

Directions:

  • In a saucepan,add water,soaked rice,mix well & bring it to boil,cover & cook on low flame for 18-20 minutes.
  • In a blender jug add cooked rice,rusk,milk,blend well & set aside.
  • In a wok,add sugar,spread evenly & cook on low flame until sugar is caramelize & turns brown.
  • Add milk,mix well & cook on low flame for 2-3 minutes.
  • Add sugar,cardamom powder,mix well & cook on medium flame for 8-10 minutes.
  • Add almonds,pistachios & mix well.
  • Add blended paste,mix well & cook on medium low flame until desired thickness & consistency (35-40 minutes).
  • Take out in a serving dish,garnish with almonds,pistachios,almonds & serve chilled!
