Orange Posset

Ingredients:

  • Oranges 6-8 or as required
  • Cream 400ml (room temperature)
  • Sugar 1/3 Cup or to taste
  • Vanilla essence ½ tsp
  • Orange zest 1 tsp
  • Orange juice 2 tbs
  • Lemon juice 2 tbs
  • Orange slices
  • Mint leaf

Directions:

  • Cut oranges in half longwise, remove its pulp to create a clean vessel for a posset & squeeze out its juice & set aside.
  • In a saucepan, add cream, sugar, vanilla essence, orange zest & whisk well.
  • Turn on the flame & cook on very low flame while stirring until it comes to simmer (10-12 minutes).
  • Turn off the flame, add fresh orange juice, lemon juice & whisk well.
  • Turn on the flame & cook on low flame for a minute & strain through strainer.
  • Pour warm posset into the cleaned orange rinds, tap few times & let it set for 4-6 hours in refrigerator.
  • Garnish with orange slices, mint leaf & serve chilled (makes 9-10)!
