Orange Posset

Ingredients:
- Oranges 6-8 or as required
- Cream 400ml (room temperature)
- Sugar 1/3 Cup or to taste
- Vanilla essence ½ tsp
- Orange zest 1 tsp
- Orange juice 2 tbs
- Lemon juice 2 tbs
- Orange slices
- Mint leaf
Directions:
- Cut oranges in half longwise, remove its pulp to create a clean vessel for a posset & squeeze out its juice & set aside.
- In a saucepan, add cream, sugar, vanilla essence, orange zest & whisk well.
- Turn on the flame & cook on very low flame while stirring until it comes to simmer (10-12 minutes).
- Turn off the flame, add fresh orange juice, lemon juice & whisk well.
- Turn on the flame & cook on low flame for a minute & strain through strainer.
- Pour warm posset into the cleaned orange rinds, tap few times & let it set for 4-6 hours in refrigerator.
- Garnish with orange slices, mint leaf & serve chilled (makes 9-10)!
