Muttaikose Sambar with Sundal Gravy

Ingredients for Muttaikose Sambar:

  • 2 cups muttaikose (cabbage), chopped
  • 1 cup toor dal (split pigeon peas)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 2 tbsp sambar powder
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

1. Cook the toor dal in a pressure cooker until soft. Mash and set aside.

2. In a pot, heat oil and add mustard seeds and cumin seeds. Let them splutter.

3. Add onions and green chilies, sauté until onions are translucent.

4. Add the chopped tomatoes, turmeric powder, sambar powder, and salt. Cook until the tomatoes are soft.

5. Add chopped muttaikose and a bit of water, cover, and cook until soft.

6. Stir in the mashed dal and simmer for a few minutes. Garnish with fresh coriander leaves.

Ingredients for Sundal Gravy:

  • 1 cup cooked chickpeas
  • 1 onion, finely chopped
  • 1 green chili, slit
  • 1/2 tsp mustard seeds
  • 2 tbsp grated coconut (optional)
  • Salt to taste
  • Coriander leaves for garnish

Instructions:

1. In a pan, heat oil and add mustard seeds, letting them pop.

2. Add onions and green chili, sauté until onions are golden brown.

3. Stir in the cooked chickpeas and salt, mix well. Add grated coconut if using.

4. Cook for a few minutes and garnish with coriander leaves.

Serve the Muttaikose Sambar hot with rice and accompany it with Sundal Gravy. This nutritious meal is perfect for your lunch box!
