Maple Coconut Popcorn Recipe

Ingredients:
8 cups of popped Popcorn (two bags of microwave popcorn)
1/2 cup Pure Maple Syrup
1/4 cup Coconut Oil
1 teaspoon Vanilla
1/4 teaspoon salt
1/2 teaspoon Baking Soda

Preheat the oven to 350 degrees Fahrenheit.
Line a large baking sheet with parchment paper. Prepare popcorn and transfer to the lined baking sheet. Remove any popcorn seeds from the pan. In a small sauce pan, on medium heat, add in the maple syrup, coconut oil, vanilla, and salt. Let simmer for 5 minutes. Remove from heat and stir in the baking soda. This will make the mixture very foamy. Pour your caramel over the popcorn and mix. Bake for 7 minutes. Stir once half way through baking. Remove from the oven and stir once more. Let cool completely on the pan. Enjoy!
