Ingredients:

  • Whole Wheat Flour - 1 cup
  • Salt - 1 tsp
  • Curd - 3 tbsp
  • Baking Soda - ½ tsp
  • Water - 1 cup
  • Oil - a dash

Tadka:

  • Oil - 2 tbsp
  • Asafoetida - ½ tsp
  • Mustard Seeds - 1 tsp
  • Cumin - 1 tsp
  • Curry Leaves - a sprig
  • Ginger, chopped - 2 tsp
  • Green Chilli, chopped - 2 nos
  • Chilli Powder - ¾ tsp

Toppings:

  • Onion, chopped - handful
  • Tomato, chopped - handful
  • Coriander, chopped - handful

Instructions:

This Instant Atta Uttapam is a delicious South Indian breakfast option made with whole wheat flour. Start by mixing the whole wheat flour, salt, curd, baking soda, and water in a bowl to create a smooth batter. Let the batter rest for a few minutes.

While the batter rests, prepare the tadka. Heat oil in a pan and add asafoetida, mustard seeds, cumin, curry leaves, chopped ginger, and green chilli. Sauté until fragrant and the mustard seeds start to crackle.

Now, add the tadka to the batter and mix well. Heat a non-stick pan and brush it with a dash of oil. Pour a ladle of the batter onto the pan and spread it gently to form a thick pancake. Top with chopped onions, tomatoes, and coriander leaves.

Cook on medium heat until the underside is golden brown, then flip and cook the other side. Repeat with the remaining batter. Serve hot with chutney for a flavorful breakfast!
