Date Filled Cookies

Ingredients:
Prepare Cookie Dough:
-Makhan (Butter) 100g
-Icing sugar 80g
-Anda (Egg) 1
-Vanilla essence ½ tsp
-Maida (All-purpose flour) sifted 1 & ½ Cup
-Milk powder 2 tbs
-Himalayan pink salt ¼ tsp
Prepare Dates Filling:
-Khajoor (Dates) soft 100g
-Makhan (Butter) soft 2 tbs
-Badam (Almonds) chopped 50g
-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 1 tbs
-Til (Sesame seeds) as required
Directions:
Prepare Cookie Dough:
-In a bowl,add butter & beat well.
-Add icing sugar,mix then beat well until creamy.
-Add egg,vanilla essence & beat well.
-Add all-purpose flour,milk powder,pink salt,mix well & beat until well combined.
-Wrap dough tightly in cling film & refrigerate for 30 minutes.
Prepare Dates Filling:
-In a chopper,add deseeded dates,butter & chop well.
-Add almonds & chop well.
-Take a small quantity of mixture,make a ball then roll out with the help of hands & set aside.
-Take out the dough from refrigerator,remove cling film,sprinkle dry flour & roll out with rolling pin.
-Place rolled date filling on the dough,roll the dough slightly & seal the edges then cut the dough into 3” finger cookie.
-Place date cookies on a baking tray lined with butter paper & refrigerate for 10 minutes before baking.
-In a bowl,add egg yolk,milk & whisk well.
-Apply egg wash on cookies & sprinkle sesame seeds.
-Bake in preheated oven at 170C for 15-20 minutes (makes 16-18).
