Chickpea Patties Recipe

Ingredients for 12 chickpea patties:

  • 240 gr (8 & 3/4 oz) cooked chickpeas
  • 240 gr (8 & 3/4 oz) cooked potato
  • an onion
  • a garlic
  • a small piece of ginger
  • 3 tbsp olive oil
  • black pepper
  • 1/2 tsp salt
  • 1/3 tsp cumin
  • a bunch of parsley

For the yogurt sauce:

  • 1 cup vegan yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • black pepper
  • 1/2 tsp salt
  • 1 small grated garlic

Instructions:

  1. Mash the cooked chickpeas and potato in a large bowl.
  2. Add finely choped onion, garlic, ginger, olive oil, black pepper, salt, cumin, and finely chopped parsley. Mix all ingredients until you get a homogeneous mixture.
  3. Form small patties with the mixture and cook on a preheated pan with olive oil. Cook for a few minutes until golden brown on both sides.
  4. For the yogurt sauce, in a bowl mix vegan yogurt, olive oil, lemon juice, black pepper, salt, and grated garlic.
  5. Serve the chickpea patties with the yogurt sauce and enjoy!
