Broccoli Cheese Soup

- 24 oz broccoli florets
- 1 onion, chopped
- 32 oz chicken broth
- 1 1/2 C milk
- 1/2 tsp salt
- 1/2 tsp pepper
- 1-2 C shredded cheese
- Bacon crumbles & sour cream for topping
- Cook broccoli until tender.
- In large pot, saute onions in olive oil until translucent.
- Add broccoli, broth, milk, salt and pepper. Bring to boil.
- Cover, reduce temp, and simmer 10-20 minutes.
- Stir in cheese.
- Top with bacon and sour cream.
