Broccoli Cheese Soup

Broccoli Cheese Soup
  • 24 oz broccoli florets
  • 1 onion, chopped
  • 32 oz chicken broth
  • 1 1/2 C milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1-2 C shredded cheese
  • Bacon crumbles & sour cream for topping
  • Cook broccoli until tender.
  • In large pot, saute onions in olive oil until translucent.
  • Add broccoli, broth, milk, salt and pepper. Bring to boil.
  • Cover, reduce temp, and simmer 10-20 minutes.
  • Stir in cheese.
  • Top with bacon and sour cream.
