Baisan Potato Squares

Ingredients:
- Aloo (Potatoes) 2 large
- Boiling water as required
- Baisan (Gram flour) 2 Cups
- Himalayan pink salt 1 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Sabut dhania (Coriander seeds) crushed 1 tbs
- Ajwain (Carom seeds) ¼ tsp
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
- Water 3 Cups
- Hari mirch (Green chilli) chopped 1 tbs
- Pyaz (Onion) chopped ½ Cup
- Hara dhania (Fresh coriander) chopped ½ Cup
- Cooking oil 4 tbs
- Chaat masala
Directions:
- Grate potatoes with the help of the grater & set aside.
- In boiling water,place strainer,add grated potatoes & blanch on medium flame for 3 minutes,strain & set aside.
- In a wok,add gram flour,pink salt,cumin seeds,red chilli powder,turmeric powder,coriander seeds,carom seeds,ginger garlic paste,water & whisk until well combined.
- Turn on the flame,mix continuously & cook on low flame until dough is formed (6-8 minutes).
- Turn off the flame,add green chilli,onion,blanched potatoes,fresh coriander & mix well.
