Baisan Potato Squares

Ingredients:

  • Aloo (Potatoes) 2 large
  • Boiling water as required
  • Baisan (Gram flour) 2 Cups
  • Himalayan pink salt 1 tsp or to taste
  • Zeera (Cumin seeds) roasted & crushed 1 tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Haldi powder (Turmeric powder) ½ tsp
  • Sabut dhania (Coriander seeds) crushed 1 tbs
  • Ajwain (Carom seeds) ¼ tsp
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
  • Water 3 Cups
  • Hari mirch (Green chilli) chopped 1 tbs
  • Pyaz (Onion) chopped ½ Cup
  • Hara dhania (Fresh coriander) chopped ½ Cup
  • Cooking oil 4 tbs
  • Chaat masala

Directions:

  • Grate potatoes with the help of the grater & set aside.
  • In boiling water,place strainer,add grated potatoes & blanch on medium flame for 3 minutes,strain & set aside.
  • In a wok,add gram flour,pink salt,cumin seeds,red chilli powder,turmeric powder,coriander seeds,carom seeds,ginger garlic paste,water & whisk until well combined.
  • Turn on the flame,mix continuously & cook on low flame until dough is formed (6-8 minutes).
  • Turn off the flame,add green chilli,onion,blanched potatoes,fresh coriander & mix well.
