How to make this sabzi -
- before chopping Arbi make sure you have greases your hands as it can cause itchiness
- Take 300 gm Arbi. Remove skin of Arbi and cut thin slices
- Take 1 tbs ghee in a pan and 1 tsp jeera (cumin seeds) and 1/2 tsp ajwain (carrom seeds)
- Add 1 tsp turmeric powder (haldi) and 1/2 tsp asafoetida (hing powder)
- Once you hear crackling sound, add chopped Arbi and some salt and mix nicely
- Now keep cooking on slow flame till you see golden color - we need to make sure it’s well cooked
- If need be sprinkle some water so masala doesn’t get burnt
- Now add 1.5 tsp red chilli powder, 2 tsp dhaniya powder, 1 tsp aamchoor powder
- Then add 1 medium size onion laccha and 2-3 green chillies
- Mix well and cook for 5 minutes more
- Finally garnish with fresh coriander and serve with dal rice
