Apricot Delight
  • Ingredients:
    Prepare Apricot Puree:
    -Sukhi khubani (Dried apricots) 250g (washed thoroughly & soaked overnight)
    -Sugar 2 tbs or to taste
    Prepare Custard:
    -Doodh (Milk) 750ml
    -Sugar 4 tbs or to taste
    -Custard powder 3 tbs
    -Vanilla essence ½ tsp
    Prepare Cream:
    -Cream 200ml (1 Cup)
    -Sugar powdered 1 tbs or to taste
    Assembling:
    -Plain cake slices
    -Apricot almonds substitute: Almonds
    -Pista (Pistachios) sliced
  • Directions:
    Prepare Apricot Puree:
    -Deseed soaked apricots & put them in a saucepan.
    -Add 1 Cup of water,sugar,mix well & cook on low flame for 6-8 minutes.
    -Turn off the flame,mash well with the help of masher & set aside.
    -Deseed the apricots and keep the hard kernels aside and break the kernels with the help of the cutter.
    NOTE: Cooked apricots can be blended with the help of hand blender.
    Prepare Custard:
    -In a saucepan,add milk,sugar,custard powder,vanilla essence & whisk well.
    -Turn on the flame & cook on low flame until it thickens.
    -Let it cool.
    Prepare Cream:
    -In a bowl,add cream,sugar,whisk well & set aside.
    Assembling:
    -In a serving dish,add & spread prepared apricot puree,plain cake slices,prepared cream,prepared apricot puree,prepared custard,plain cake slices,prepared apricot puree,prepared cream & prepared custard.
    -Garnish with apricot almonds,pistachios & serve chilled!
