Afghani White Kofta Gravy

Ingredients:

  • Boneless chicken cubes 500g
  • Pyaz (Onion) 1 medium
  • Hari mirch (Green chillies) 2-3
  • Hara dhania (Fresh coriander) chopped 2 tbs
  • Adrak lehsan paste (Ginger garlic paste) 1 tsp
  • Zeera powder (Cumin powder) 1 tsp
  • Himalayan pink salt ½ tsp or to taste
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Lal mirch (Red chilli) crushed 1 tsp
  • Garam masala powder ½ tsp
  • Ghee (Clarified butter) 1 & ½ tbs
  • Bread slice 1
  • Cooking oil 5-6 tbs
  • Pyaz (Onion) roughly sliced 3-4 small
  • Hari elaichi (Green cardamom) 3-4
  • Hari mirch (Green chillies) 4-5
  • Badam (Almonds) soaked & peeled 8-9
  • Char maghaz (Melon seeds) 2 tbs
  • Water 3-4 tbs
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Zeera powder (Cumin powder) ½ tsp
  • Javitri powder (Mace powder) ¼ tsp
  • Dhania powder (Coriander powder) ½ tsp
  • Garam masala powder ½ tsp
  • Himalayan pink salt ½ tsp or to taste
  • Adrak lehsan paste (Ginger garlic paste) ½ tsp
  • Dahi (Yogurt) whisked ½ Cup
  • Water ½ Cup
  • Cream ¼ Cup
  • Kasuri methi (Dried fenugreek leaves) 1 tsp
  • Hara dhania (Fresh coriander) chopped

Directions:

  1. Prepare Chicken Koftay: In a chopper,add chicken,onion,green chillies,fresh coriander,ginger garlic paste,cumin powder,pink salt, black pepper powder,red chilli crushed,garam masala powder,clarified butter,bread slice & chop until well combined. Grease hands with oil,take a small quantity of mixture (50g) & make koftay of equal sizes. In a wok,add cooking oil,prepared chicken koftay & fry on low flame from all sides until light golden & set aside (makes 12).
  2. Prepare Kofta Gravy: In the same wok,add onion,green cardamom & fry on medium flame for 2-3 minutes. Take out onion & transfer to a blending jar,add green chillies,almonds,melon seeds,water & blend well.In the same wok,add blended paste & mix well. Add black pepper powder,cumin powder,mace powder,coriander powder,garam masala powder,pink salt,ginger garlic paste,yogurt & mix well,cover & cook on low flame for 4-5 minutes.Add water,mix well & cook on medium flame for 1-2 minutes. Turn off the flame,add cream,dried fenugreek leaves & mix well.Turn on the flame,add prepared fried koftay & mix gently. Add fresh coriander,cover & cook on low flame for 4-5 minutes. Serve with naan or chapati!
